Demi-sec or Semi-seco is the term for sparkling wines made to be just off dry. Most champagne, traditional method and Cavas are made to be dry with high acidity, which is great for aperitif but can get a bit much. This slightly sweeter version takes the edge off and gives you a more luxurious, creamy texture. So, it’s perfect for the people who find Champagne style wines too tart, or if you’re planning to eat something just a little bit sweet and naughty! It’s generally made from the same blend as ‘normal’ Champagne wines of Pinot Noir, Chardonnay and Pinot Meunier, with some local extras for Cava. Most sparkling wines have some sweet liquor (called the dosage) added to take the edge of the dryness, and these just have a little bit more.

Things you should know

Top Tip: If you're not sure try a Semi Seco first, it will be significantly cheaper than the Champagne.
Specific Food Match: Interestingly Demi-Sec works as well as a pre dinner / party drink as it does a 'dessert wine'. But the place it comes into its own is 'tea time', where you are as likely to have a tasty sandwich as a little cake or meringue. The combination of acidity and sweetness will perfectly balance anything on that lovely cake stand!
